A simple compound butter flavored with kimchi. Use it on grilled meat, vegetables, or seafood.

Why It Works

Kimchi + butter = BFFs.
  • Combining spicy-tart kimchi with butter creates the world's simplest sauce for grilled seafood, meat, and vegetables.

Instead of using a food processor, you can incorporate the kimchi and butter using a fork in a bowl.

Ingredients

  • 1 stick unsalted butter (4 ounces; 115g), softened
  • 1 1/2 ounces (45g) kimchi with liquid, chopped

Directions

    Combine butter and kimchi in the bowl of a food processor (see note above). Pulse until combined. (It may take a few pulses to fully incorporate the kimchi liquid.) Wrap butter tightly and store in the refrigerator for up to 2 weeks or in the freezer for several months.
