Chocolate is something that seems to be forgotten this time of year. Our preoccupation with chocolate chip cookies and rich chocolate cakes falls by the wayside, ushering in a season filled with tons and tons of cinnamon.
Don't get me wrong, I am a massive fan of sugar and spice and everything nice, but I always have this needling voice in the back of my head trying to remind me of chocolate's existence. I find myself scouring tables at Christmas markets and rifling through trays at cookie swaps looking for a nice little nugget of dense, dark chocolate flavor.
With limited success, I've started taking things into my own hands. These macaroons are rich and sweet in all the right ways, and the flourless coconut-based dough bakes up into delightfully chewy cookies. The chunks of chocolate studded throughout are a welcome surprise and help to satisfy even the deepest of chocolate cravings.
