At my extended family's annual summer weekend in a small Wisconsin lake town, we always eat a last lunch of charcoal-grilled beer brats, pasta salad, and boiled corn on the cob before parting ways. This is but one of a long list of meals that must remain the same at yearly family gatherings, lest a 30-person riot erupt in defense of tradition. So the plain boiled corn stays, year after year, and to this day is the dish that for me most easily conjures summer memories.

Don't get me wrong—you can hardly go wrong with plump and juicy ears of corn picked fresh that morning from the farm down the road, shucked lakeside, boiled by the dozen, and served with butter and salt. It's just that the amount of corn I plan to buy and consume this summer necessitates a slightly wider variety of preparations. Apologies to any family members currently reading this for the blasphemy, but it has to be said: any one of these recipes is worth breaking tradition for.
