Max spent part of this week in Spain to visit the pigs that go into the famed Spanish Jamon Iberico. Cinco Jotas, one of the country's leading ham producers, lets their pigs run around all day eating acorns to fatten up. Not a bad way to be a pig.
Pigs and Their Shepherd
This is Juan Carlo, a porquero (pork shepherd) who's been taking care of pigs for 25 years.
The Ham Room
And here's one of the many cellars where the hams cure. It's an underground ham maze.
Jamon Iberico pigs come with black skin and feet, which is why they're often called "pata negra" ("black hoof"). Turns out our Jamon has an Iberian version, too. Just as foldy.
Happy Birthday, Ed!
For Kenji's latest waffling experiment, he waffled a pizza bianca filled with mozzarella and salami, with great success!
Making Hot Dogs
Butcher and sausage maker Ryan Farr of San Francisco's 4505 Meats showed us how to make hot dogs from scratch. Grind up beef and beef fat, mix with spices, process into paste, smush into casings, smoke until cooked through, then eat. Mmm, freshly-made hot dogs!
A great rack of wieners, that is.
EAT EAT EAT
Lunch is served. Yeah, we're spoiled.
Special Beer Delivery
The Coors Light Explorers came by SEHQ with lots and lots of Coors Light possibly extracted from the depths of a frozen lake.
Serious Eaters From Norway
Serious Eats readers Christoph and Anette of Norwegian food blog innifristelse.no stopped by the office during their vacation in NYC to meet the Serious Eats team and help us eat pizza! Here they are with Ed and Kenji.
Hambone and Yuba stayed home this week, apparently having a luxuriously lazy time on their giant plush dog bed.
Erin Jackson really knows how to keep her work environment adorable: "Here's Pixel in her 'sidecar', a drawer located within easy petting reach from the computer I use for photo editing. She'll jump right in as soon as I sit down."
Going In for the Treat
Valentine's Day-Themed Bread
Breads Bakery sent us this heart-shaped loaf of bread, awww. It's damn tasty, definitely better than a heart-shaped box of chocolates.
This is probably not how you're supposed to eat it. Anyway, it looks like a dragon, so I gave it a dragon face. And dragon blood.
