With the new year underway, some of your may have resolved to start cooking at home more often. I, too, have been struck with the desire to spend more time in the kitchen, which I enjoy immensely but find easily sidelined by the realities of my busy New York life (to say nothing of the spatial limitations of my New York kitchen). But hey, maybe this year is the year that I'll finally get into bread baking, or master the art of tagines.

Ambitions aside, almost every home cook has a deal-breaker —the point at which a recipe becomes untenable to complete. Maybe it's equipment-based, or has to do with time or depth of knowledge required to finish the dish. Everyone at Serious Eats has at least one —click through to see them all. What are yours?
