The bird was 23 pounds and dry brined for 1 day using salt, sazon, pepper, and Mexican oregano and cooked for about 2 1/2 hours at 375. "Since I cooked for one, I didn't want to spend all day over a stove. First I baked Mario Batali's sausage, chestnut, and fennel stuffing recipe from The Chew that I spruced up with some dried currents and fresh sage. For a vegetable side, I made Kenji's caramelized Brussels Sprouts and shallots with balsamic vinegar. I didn't get a turkey breast this year, so I dry roasted a large chicken breast I had in the freezer with a two day dry salt brine a la Thomas Keller. Finally I made some mashed potatoes and a pan dripping/chicken stock gravy. It was all washed down with copious amounts of a northern Italian slightly sparkling Pinot Grigio." — Michael Secondo (aka msecondo)

"Nothing fancy this year, just classic roasted turkey, gravy, mashed potatoes fortified with butter, cream cheese, and half and half, sweet corn that was cut off the cob and frozen when it was in season, mashed sweet potatoes with streusel topping, stuffing, and creamed pearl onions with buttered bread crumbs. "My brother, Dave Metz (who cooks at Craftbar), made a delicious turchetta for our Thanksgiving meal that he stuffed with turkey chorizo (he made the chorizo from the legs of the turkey). We were inspired by Kenji! We collaborated on the dressing. I made gluten-free cornbread, and he used that and extra turkey chorizo, along with a blend of dried blueberries, cranberries, and golden raisins. My husband and I made a make-ahead mashed potato casserole, which was topped with Swiss & Gruyere cheese and a gluten-free-breadcrumb/parsley topping. This was the best Thanksgiving meal I have ever had!" —Linda Bilyk
