One-Pot Wonders: Huevos Rancheros
The inspiration for this week's recipe came from a major bout of food envy. We've all fallen prey to it: drooling over a plate at a neighboring table, eyes glued as they devour their incredibly delicious looking food, ignoring our companion and they nudge under the table as if to say, "Get it together!" I'm not alone in this, right?
This time was serious, though. Albeit I was hungry, but the thick, deep-red sauce, mixed with beans and topped with a bright avocado crema and fresh chopped cilantro set off a major craving. Not to mention the corn tortillas served on the side, which the wise orderer was using to scoop up the contents of the bowl, almost like soupy nachos (another brilliant idea). But the moment she broke the yolk, enveloping the sauce with its rich flavor and color, all hope of acting remotely natural was lost. I dejectedly stared at my lame omelette and decided that I needed to make huevos rancheros at home. Immediately.
Then it hit me, it's a perfect one-pot meal!
All you need are your basic salsa ingredients—namely tomatoes, garlic and jalapeño. Cooked together, they make a warmed up and flavorful sauce that's great for cold weather or hangovers. While the popular brunch dish is typically topped with fried eggs, poaching them shakshuka-style and serving them over crispy tortillas makes for a quick and easy one-pot dinner. Besides, who doesn't love breakfast for dinner?
