To me, oatmeal is a weekday meal. Something that's quick and filling, but not a dish I would lovingly savor with a pot of coffee and the Sunday paper. These pancakes transform a weekday staple into a meal that's fit for guests. Adding oats to a quick pancake batter and topping them with soft pears and toasted pecans makes this a brunch you won't easily forget.
Pulsing half the oats in a food processor refines the texture of the final product, but if you don't feel like getting out an extra piece of kitchen equipment, just skip that step. You'll end up with a heartier final product, which is pleasing in its own way.
