At once delicate and substantial, savory crêpes are perfectly suited for brunch. Softly scrambled eggs make a wonderful filling, especially with the addition of creamy goat cheese. Any combination of herbs you have floating around your kitchen will work, but I personally favor chives, or even scallions.
If you're serving a crowd, you can make the crêpes ahead of time. Although seemingly fragile, they actually reheat very well—you can easily store them in the fridge overnight. Just place them in a low oven before the guests arrive to make them hot and pliable again, before filling them with the eggs.
