It could be the crushing boredom, or the anxiety that comes from knowing I'll be jammed into a metal tube hurtling through the sky for the next few hours, but something about being at the airport always makes me ravenous. Most of the time, airports are a terrible place to be when you're hungry, but not Concourse C at the SeaTac International Airport, where you can get your hands on a grilled cheese sandwich from Beecher's Homemade Cheese, a much-loved cheese shop whose first location is at Pike Place Market.

The airport location has a similar menu as Pike Place, right down to the prices. There's the "World's Best" mac and cheese, along with soup and sandwiches. I opted for the baseline grilled cheese sandwich ($5.94). It's made with the same formulation of cheese as the macaroni and cheese: Flagship and Just Jack cheeses, making it taste a bit like a mac and cheese sandwich, minus the noodles.

It's simple, but in the best way possible. Both varieties of cheese are throughly melted and bring their own, unique flavor (the Just Jack is super creamy; the Flagship buttery and nutty), and the bread, brushed with oil and finished on a panini press, gets crisp and toasty.

Sandwiches are made to order, so you'll have time to browse the rest of the shop, including tubs of cheese curds so fresh they squeak, boxes of fancy crackers, and a display case stocked with different types of cheese (all of which you can take on your flight). Most importantly, you can also score a free sample of mac and cheese. That, you do not want to miss.
