At Bruxie, waffles come in all forms: filled with dark Belgian chocolate, folded around lemon cream and seasonal berries, or stuffed with savory fixings, from smoked salmon to hot pastrami. I went with something a bit more straightforward: the Turkey Club ($8.95).
Warm, golden waffles envelop thin slices of turkey, romaine lettuce, and tomato. On one side, there's a slab of Gruyere flecked with crisp shards of bacon. On the other, a squirt of pesto mayo. Two hunks of soft, ripe avocado lazing on top of the meat complete the picture.
Bruxie's waffles are made with a Brussels waffle-style batter that's leavened and contains no sugar. They're light, and a bit yeasty, with shallow divots and a crisp exterior. If you love a toasted sandwich (or are partial to paninis), it's worth stopping in to one of the five locations in Southern California to give one a whirl, whether it's savory or sweet.
