The Asado Board
Three types of chorizo ($9 each), marrow, veal sweetbreads ($20), roasted Border Springs lamb shank ($24), and 10-ounce prime bone in short ribs ($18). Each meat is prepared to its ideal temperature and consistency.
Grilled Salmon ($12)
Grilled salmon served with rapini, citrus, pork rinds, and aioli.
Yellow Tail ($14)
Yellow tail served with sweet potato, grilled corn, and citrus. The sweet potato is a decidedly Peruvian inclusion.
Grilled Octopus ($16)
Grilled octopus causa, tuna confit, ramps, potato, and avocado.
Pork Chicharones ($16)
Crispy Berkshire pork chicharones, ribs, belly, and a sweet potato emulsion. Albisu is careful to point out that South American chicharones are not the fried pork skins that they are in Mexico, but actual chunks of meat.
Chivito Sandwich ($18)
Del Campo's Chivito is a pile of seared ribeye, mortadella, Iberico ham, provolone, olives, a fried egg, and heart of palm. It's a massive, delicious mess.
Fernet Con Cola ($12)
One of Del Campo's bottled cocktails. Fernet Branca, Coca-Cola, and Madagascar vanilla syrup. The mellow, earthy cola concoction is bottled to help with consistency and for presentation. They are made fresh every three days.
