Crispy Berkshire pork chicharones, ribs, belly, and a sweet potato emulsion. Albisu is careful to point out that South American chicharones are not the fried pork skins that they are in Mexico, but actual chunks of meat.

Del Campo's Chivito is a pile of seared ribeye, mortadella, Iberico ham, provolone, olives, a fried egg, and heart of palm. It's a massive, delicious mess.

One of Del Campo's bottled cocktails. Fernet Branca, Coca-Cola, and Madagascar vanilla syrup. The mellow, earthy cola concoction is bottled to help with consistency and for presentation. They are made fresh every three days.
