Perfect Grilled Cheese
Even golden brown crust, moist crumb, oozy core.

The Ingredients
2 slices of hearty sandwich bread, 2 slices of American cheese, 2 tablespoons of butter, and some kosher salt. The cornerstones of a healthy diet.

Step 1: Melt the butter
Melt 1/3rd of your butter in a non-stick or cast iron pan over relatively low heat. Melted, not browned is what you're going for.

Step 2: Toast bread
Toast your bread on one side until it's a pale golden brown, moving it around the skillet with your fingers so it cooks evenly.

Step 3: Lay on the Cheese
Add your cheese slices to the bread, on the toasted side, and close your sandwich, toasted-side-in. This is key.

Step 4: Close the 'wich
Close your sandwich, toasted-side-in. This is key.

Step 5: Low and slow
Add another 1/3rd of the butter and melt it over low to medium-low heat.

Step 6: Cook it slowly
Add your sandwich, swirl it around the pan to collect the butter, then cook low and slow, moving the sandwich around the pan and rotating it like a record every so often to get even color. This should take at least 5 minutes.

Step 7: Remove the sandwich
Remove the sandwich once one side is nicely golden brown, then melt the remaining butter.

Step 8: Season
Return the sandwich to the skillet, toasted-side-up, and season with a sprinkle of kosher salt. You can skip this step if you use salted butter. Continue cooking until the second side is deep golden brown.
