Speaking of Bananas
One of Erin's favorite street treats in Thailand was banana roti, a fried dough filled with sliced bananas and egg, which then gets drenched with sweetened condensed milk (mmmm). This one she enjoyed in Bangkok along with SE contributor Jamie Feldmar.

Making Banh Xeo in Vietnam
Erin also took a few cooking classes while traveling through Vietnam on a food-centric trip with Intrepid Travel. In this class was the delightful Vietnamese chef Dzoan Cam Van in Binh Duong just outside of Saigon. They fried up some bánh xèo, the delicious Vietnamese pancakes made with coconut milk, turmeric, shrimp, pork, and bean sprouts.
