Sandwiched: Spam and Egg Breakfast Sandwiches

For me, bacon and eggs, or sausage and eggs, are fine breakfast pairings on most mornings. But if given the choice, I'd most likely opt for a combination of Spam and eggs. Heck, if you catch me on the right morning, I might still go the Spam and egg route over a choice of steak and eggs (maybe).

There's just something about a salty slice of fried, crisp Spam paired with the runny yolk of a sunny side-up egg. I realize this magical pairing isn't new to any true Spamophile, but I'm trying to spread the Spam gospel to anyone else that will listen, and Spam and eggs are a good place to start.

And when the two perfectly paired proteins are wedged into a toasted Hawaiian roll slathered in jelly (pineapple, mango, and even strawberry, all work well), it makes for an epic breakfast sandwich that might even sway the harshest of Spam critics (one could only hope). The sweetness of the rolls and the jelly balance the salty Spam and the rich, runny egg yolk. Oh, and a squirt of Sriracha never hurts either. If a Spam and egg breakfast sandwich doesn't get you going in the morning, I'm not sure what will.
