The Cole ($8)
One of Farr's new sausage combos, the Cole was named after 4505's kitchen manager. "I've been working with him for 12 years, and he makes the best chorizo con queso, ever." Here, a bacon hot dog is topped with the queso sauce (made with a Velveeta bechamel, of course), pickled red onions, green onions, and corn chips dusted with chili powder.
Meat-on-meat-on-meat, the butcher loads a bacon hot dog with smoked ham, cubes of headcheese, and jalapeno, before dousing it in chimichurri sauce and coriander aioli. "It has been liverwurst, it really just depends on what we have," Farr says of the combination.
As classic a preparation as they come, a cheddar brat is topped with homemade kraut, onions, and a healthy squeeze of mustard made in-house.
