Sunday Brunch: Fried Fish with Cheddar-Thyme Grits

Grits make a great oatmeal alternative for those of us who want something savory in the morning, but still need something easy to digest. This recipe uses grits two ways: the first in the classic sense, just adding cheddar cheese and thyme. And the second as a coating for fish before frying.
A few bits of cilantro and a wedge of lime adds some lightness and acidity that elevate enough to something you may even consider preparing for a quick weeknight supper No matter what time of day it may be, make sure there is plenty of cold beer to go alongside.
