Cutting the sweet potato into small cubes makes this dish cook up fast, which is important if you are in serious need of some sustenance. It may seems like a bit more work on the preparation side of this recipe, but it's well worth it once those sweet potatoes hit the pan. This hash goes very well with a really good Bloody Mary.
