Smoky, salty bacon combined with soft fried onions and sweet potatoes makes a simple hash that cooks up quickly. Topping the hash with an avocado cream and a fried egg takes this classic breakfast dish and puts a new twist on it.

Cutting the sweet potato into small cubes makes this dish cook up fast, which is important if you are in serious need of some sustenance. It may seems like a bit more work on the preparation side of this recipe, but it's well worth it once those sweet potatoes hit the pan. This hash goes very well with a really good Bloody Mary.
