Chef Victor Albisu
The man behind the tacos. Chef Albisu comes from BLT Steak and is relishing the opportunity to cook "a style of food that I have not previously cooked professionally, but have been enjoying my whole life." The Monday taco nights at Black Jack will be a testing ground for the final menu when Taco Bamba opens later this year.
Skirt steak topped with chorizo and a crunchy bit of chicharones, the namesake taco was extremely popular.
Crispy Kiss Taco
Or the "Kiss, Kiss." This taco contains pork tongue, beef tongue, scallions, and red chili aioli.
Chipotle Portobello Taco
The spiciest taco of the bunch and the lone vegetarian option with portobello, grilled corn, and cotija.
Pork Panza Taco
Grilled bacon, pork belly, pineapple, and pickled jalapeño. Hard to argue with that. The bacon and pork belly are rich and smoky, complemented nicely by the sweetness of the pineapple.
Duck Tinga Taco
Tender duck leg, crispy skin, and charred endive topped with chipotle crema.
Black Oyster and Shrimp Campache
One of the hors d'oeuvres offered, a light Campeche-style fresh shrimp cocktail.
