Weekend Cook and Tell Round Up: Cooking on the Quick

Our last challenge for Weekend Cook and Tell was for all of you to share your favorite time-friendly eats. We called this Cooking on the Quick. Frankly, I was overwhelmed by the response and have decided to bookmark the page for my own selfish future needs. (Baby Zog requires much chasing.) Take a look and see what in-a-crunch ideas you will want to bookmark for yourselves.

You don't have to sacrifice nutrition when pressed for time. richa recommends her Portobello Mushrooms Stuffed with Hash Browns. Just "coat the bellas, grate some russet, mix in herbs 'n cheese, drizzle evoo, and bake!"

J.W. Hamner cooks ahead for the week (a wise idea). When he's in a true time pinch, J.W. utilizes his pressure cooker for optimal results. "Just this past weekend I woke up Saturday morning home alone with the fiance in Maine for the week and nothing to eat in the fridge or freezer. I was able to run to the store and still have Alton Brown's pressure cooker chili on the table in time for lunch... with plenty of leftovers to get me through the week."

Just because you have time to cook, doesn't meant that quick recipes aren't useful. lemonfair provides with us with a list of 10 quick recipes. My favorite quick tip of hers, is to keep precooked pasta or rice in your refrigerator to add to dishes. It's truly genius and a belly-lifesaver. You can toss precooked linguini noodles (or whatever you have on hand) with this delicious peanut sauce. I'm totally biased when there's peanut sauce involved, but I'm positive that this is delicious.

Mhays chimed in with a cheesy, eggy, crunchy concoction of Soft-boiled Egg & Pimento Cheese Soldiers. And let's be real, you can't go wrong with any of those descriptors. You're likely to have all of these ingredients sitting in your kitchen.

He may be loco, but at least Loco_food_guy's loco is channeled in the right direction - food. If you've got 15 minutes, then you have time to make his Fish Soup. A few San Marzano tomatoes here, a dash of garlic there, and a pour of clam broth, and you're nearly there!

We had quite a few quick and easy recipes that involved adding something to pasta. Take lemonfair's idea of keeping precooked pasta on hand, and add pesto, and any leftover veggies or chicken sitting in the fridge a la scargosun. Or you could use claireOOTO's quick dish of Minestrone to add your precooked shell pasta to.

Finally, Healthiersteps likes to throw together these Baked Corn Fritters. And they're gluten-free to boot!
