There are times when what you're looking for is an elegant brunch, and you want it right now. These simple fig and goat cheese tarts are just that—simple and elegant—and can hit the table in under half an hour.

Sweet dried figs and creamy goat cheese are a classic pair; here they're seasoned gently with fresh thyme, salt and pepper. A green salad with a tart lemon vinaigrette is the perfect thing to cut through the richness. Add a bottle of rosé and you have the perfect weekend brunch.
