Fresh summer rolls are a great hot weather food since they require very little cooking and can be served cold or room temperature. Using fresh herbs and vegetables are highly encouraged. Here, the shrimp are first poached in a flavorful stock before being being rolled into rice paper wrappers with juicy, sweet mango.
