Dinner Tonight: The Green Madame (via Food52)

Fried egg, bechamel sauce, and Gruyère cheese. What's not to like about those three? In this recipe from Food52, the classic Croque Madame is spun into the mysterious Green Madame. Simply adding roasted green garlic to the mix turns this classic into something completely different. If you need something more substantial just add some more cheese and bechamel.
