An ingenious use of the curly garlic scape, the woody end is sharpened to use as a skewer. Much like a rosemary skewer, the essence from the skewer is sucked up by whatever meat you have on said skewer. In this case beef gets a nice light hit of garlic before being dipped in a garlic scape dip. No peanut sauce here, and it is not missed.
