This is EuroTrash vendor Charles Thomas's take on a quesadilla. Waffle lovers may consider the “Trashy B,” where bacon is cooked into the waffle, then topped with two eggs cooked your way.

Located in downtown Portland, The Gaufre Gourmet cart has both sweet and savory waffle options. The Caramel Apple Waffle presents a refreshing blast of sautéed spiced apples and a sweet caramel sauce drizzled on top. The light, fluffy Liege-style waffle is the perfect canvas for silky peanut butter pastry cream and whole Spanish peanuts. It's definitely more in the dessert territory of breakfast.

Smoked Steelhead Omelet from GF Chef
Even if you’re not on a gluten-free diet, this is a hearty, enjoyable breakfast. A two-egg omelette topped with melted Jack cheese encases a generous pile of steelhead fish, which owner/chef Jim smokes himself, and vibrant sautéed spinach. Get it with a side of Mustang potatoes dusted with their house seasoning. For a couple more bucks, order a cup of Nossa Familia coffee.

There are quite a few breakfast burrito options at La Jarochita. The #4 includes scrambled eggs, potatoes, bell peppers, mushrooms, onions, cheese, and sour cream. You can also pick from five different breakfast meats (pick two for just $4.99; three for $5.25). Everything harmoniously combines into this very filling burrito.

Farmer Breakfast Tacos from Pepper Box
At Pepper Box, Jim Wilson delivers New Mexican-inspired cuisine, including breakfast tacos available all day. His Farmer Breakfast Tacos made with homemade flour tortillas are filled with fluffy (cage-free) scrambled eggs, melted Tillamook cheddar, and a blend of sautéed peppers, onions, and mushrooms, and are finished off with green chile creme. If you go for Jim’s Original Breakfast Tacos, those get topped with your choice of green or red chile sauce.

"Yolko Ono" from Fried Egg I'm in Love
Jace and Ryan opened Fried Egg I'm in Love in April 2012, and the menu is pretty entertaining, at least if you're into egg and music puns. Their signature sandwich, the “Yolko Ono,” includes a fried egg, grated parmesan cheese, pesto, and a hand-pressed seasoned sausage patty between two slices of grilled sourdough bread. It's the fresh housemade pesto that livens the breakfast sandwich to the next level.

It’s wise to arrive early to The Big Egg if you want their breakfast wrap. Wraps sell out daily here, and on weekends, a considerable line may form before the cart even opens. While the grilled potatoes, scrambled eggs, organic portobellos, and meat (optional) are all cooked just right, the extra magic comes from their housemade fire-roasted poblano salsa and yogurt-lime sauce. A sriracha squirt might also be necessary. It's all neatly wrapped in a grilled flour tortilla.

Etienne Saucier has brought some delicious New Orleans-inspired sandwiches to Portland. His Breakfast Sandwich Supreme begins by removing the soft insides of a par-baked French bread, then comes the generous portions of ham, bacon, eggs, spinach, olives, artichokes, béchamel, and melted cheese. After walking it all off (perhaps a few miles), head back for a fried pocket sandwich or some tasty homemade frozen custard later in the day.

Omelet Sandwich from Brunch Box
This downtown Portland gem of a cart lets you build your own two-egg breakfast omelet sandwich. Choose one of five different cheeses, four meats, six types of bread, and numerous veggie options. We got ours with sautéed mushrooms and jalapeños, pepperjack, and bacon on an English muffin. It's like a kicked-up Egg McMuffin. Add Secret Aardvark habanero sauce or sriracha if you crave more heat.

Breakfast Burrito from Tito's Burritos
Tito’s is a favorite for affordable tacos and combination plates, but won me over was this breakfast burrito. They add both red and green bell peppers (you don't always find both at Mexican carts) along with the traditional potatoes, meat, and eggs. It all combines together inside that steamy tortilla.

Breakfast Wrap from Woodrow's
Just opened in mid-May, this cart uses high-quality, fresh, locally sourced ingredients. The breakfast wrap starts with roasted potatoes, eggs, and cheese, with options for seasonal vegetables and meat (get the bacon here). The “Tractor Sauce” is mild (a “3” on the 1-10 scale) and complements this wrap nicely. The vegan-friendly menu serves breakfast all day.
