Fried Chicken and Waffles ($10)
Fried chicken, brined in citrus and fried shatter-crisp (the batter includes ground up chicken skin!) is served alongside hearty cornmeal waffles, along with housemade chile sauce (sambal, cabbage, Fresno peppers, and hot sauce) and a dollop of maple butter.

The cornmeal waffles and chile sauce push the dish decidedly into savory brunch food territory but the maple butter still gives it a rich sweetness.
Biscuits n' Gravy ($10)
Three biscuits, flaked with butter, are topped with a pork sausage-based gravy, laced with fennel and bacon, and served with a pile of garlic home fries.
Corn tortilla chips are softened slightly by tomato sauce and topped with smoked salsa, cheddar cheese, and guacamole. Three soft scrambled eggs and a serving of home fries accompany the chilaquiles (you can also add jerked pork shoulder for $4).
Loco Moco ($12)
The infamous Mission Burger (a half-pound granulated patty seared in beef fat... uh huh.) is topped with two 63-degree eggs (cooked on the flattop), and doused in gravy (a blend of veal stock and shitake mushrooms).

A bed of jasmine rice soaks up the gravy-yolk-beef-juice blend.
