This recipe from Food52 uses a very summery ingredient: summer squash (although any squash/zucchini will do). The squash is the base of the dish even though the couscous is a substantial grain. All the recipe's components serve to highlight the squash as the main ingredient. The chopped pistachios accentuate the inherent nuttiness of the squash, while the sultanas/golden raisins bring out the sweetness. Lemon juice and mint brighten the whole dish up. Pretty limited cooking make this a great summer option.
