This recipe from Food52 might be best suited for one of those cooler summer days, since it's a more stove-centered dish, but that doesn't make it any less delicious! The lemon adds a bright acidity that is balanced by the earthy smoked paprika and cinnamon. The cilantro garnish at the end isn't just there to look pretty, it is an immediately fresh bit of green that lightens the whole thing up. The whole process should take about an hour, give or take a few minutes.
