This salad is another dish perfect for those wanting a lighter, meatless dinner. The peppery arugula is probably the only salad green that can cut through the sweetness of the pomegranate vinaigrette, but the goat cheese helps with that also. Pistachios add crunch and toastiness, which serves as the only "heavy" element in this salad.
