Weekend Cook and Tell Round Up: Mexican Party Food

La semana pasada en nuestro fin de semana de cocinar y contar... oh wait. Last week on our Weekend Cook and Tell challenge we asked all of you to break out the margarita glasses and oversized sombreros, and tell us all about your Cinco de Mayo celebrations. As usual, our cast of cookers and tellers didn't disappoint when it came to down to fiesta time. Here's a look at some the most estupendo responses.

ChefDave's Carnitas might not have been totally authentic due to a lack of lard, but delicioso nonetheless.

missmochi went with New Mexican Style Enchiladas and a cheese plate kicked up with Habanero Jelly.

munchinmunchkin lined up quite the Cinco menu including Baked Cactus Fries with an Avocado Dipping Sauce, Tamale Stuffed Peppers, Elotes, Fried Cactus Tacos with an Avocado Cream Sauce. And for dessert? Wow-worthy Fruit Tacos with Chocolate Tortillas.

melissalara01 hipped us to the easiest and best tasting homemade enchilada sauce ever adapted from a now closed Sacramento Mexican joint.

KarmaFreeCooking's go to taco filling on the 5th of May or any other day is cheesy Poblano Raja with Corn.

Not content with the usual lime and salt margarita, The Primlani Kitchen opted for something a little more thrilling: Grilled Pineapple and Jalapeño Cocktails and Jalapeño Infused Tequila Margaritas

And speaking of cocktails, our own dbcurrie is referring to Cinco as "Drinko" from here on out thanks to a particularly tasty tipped known as the Plum Loco.
