Dinner Tonight: Pan Bagnat (French Tuna Salad Sandwich, via Food52)

This sandwich is hearty enough to be a dinner for one or for two, depending on the size of the loaf. Think of this as a ‪niçoise‬ salad masquerading as a sandwich. Red peppers, artichoke hearts, olives, and French green beans turn an otherwise standard tuna salad into a complete meal. Best of all, depending on what ingredients you use it involves no cooking (although you could toast the bread before assembling the sandwich).
