Beef in the summer can be a little overwhelming and heavy-feeling on hot days. This recipe from Food52 gives you the satisfaction of eating a steak, while keeping it in a more summer-y style. Threading the Sirloin steak onto rosemary skewers creates a conveniently edible stick, and also injects the steak with the herb's flavor. The horseradish cream is there to provide a bite and brightness to an otherwise very earthy dish.
