Beets and cheese go together perfectly, and in this recipe from Food52, the result is a decadent vegetarian dish. The entire beet is used, with the beet greens combining with Swiss chard to give the dish a little more substance. The Bucheron cheese slowly melts on top of the caramelized beets, the combination of which is a perfect balance between sweet and savory.
