Cook the Book: 'Herbivoracious'
While meatless eating was relegated to a healthy but decidedly beige palette of meat emulators, brown rice, and other grains in the past, nowadays it has taken a much more vibrant turn.
Herbivoracious, a new vegetarian cookbook from former Serious Eats contributor Michael Natkin, embraces flavors from all over the globe. Natkin has assembled a book full of meatless recipes that are smart, modern, and truly satisfying for both vegetarians and omnivores alike.
This week we'll be satisfying our Herbivoracious appetites with Kouftikes de Prasa, a Middle Eastern sandwich filled with leek patties and pickled cabbage, we'll be simmering up bowls of Kimchi Jigae with Shiitakes and Daikon, and unwrapping Aromatic Tofu Packets.
