Cook the Book: 'Eat with Your Hands'
There aren't too many cookbooks out there that are peppered with the F-word but Eat with Your Hands, the newly released cookbook from Zakary Pelaccio, is one of them. Pelaccio, the leader of the Fatty family of restaurants—including Fatty Crab, Fatty 'Cue, and Fatty Snack—has created a cookbook that's not shy about language or flavor.
Eat with Your Hands is one of those perfect chef-written cookbooks that conveys not only the chef's dishes but also personality and Pelaccio is full of it. After all, how many cookbooks contain photos of their authors doing a beer bong? And we're pretty sure that Eat with Your Hands is the only cookbook out there that annotates each recipe with not only a beverage pairing (everything from cheap beer to natural wine, cocktails, and everything in between) but also suggested listening. We're really into the idea of listening to Lee "Scratch" Perry while throwing together Bok Choy with Clams or braising a lamb shoulder along to Roxy Music.
But music and drinking aside, Eat with Your Hands is a guide to replicating Pelaccio's singular take on Southeast Asian eating at home. Dishes are culled from Pelaccio's restaurants—heavy on the meat, big into chiles, with a smattering of Italian recipes thrown in as a nod to the food he grew up with. Eat with Your Hands is unique but also accessible, written in a tone that makes even the most exotic ingredient or unfamiliar technique seem doable, and fun even.
This week we're rolling up our sleeves and diving in to Eat with Your Hands. We'll serving up Fatty Crab's classic Crispy Pork and Watermelon Salad, Curry Leaf Fried Chicken, and grilling up Lamb Burgers (served with Hollandaise!).
