Suvir Saran's Farro and Mushroom Burgers

As always with our Cook the Book feature, we have five (5) copies of Masala Farm to give away this week.

Nutty, chewy, and good for you to boot, farro is a great grain. It can be slowly simmered and stirred in place of rice for risotto, tossed with veggies and chilled as a salad or fried in to crisp little patties for these Farro and Mushroom Burgers.

Adapted from Masala Farm by Suvir Saran, these vegetarian burgers are made up of umami-rich cremini mushrooms, sweet shallots, mashed potatoes, and of course, lots of farro.

Coated in panko and fried up crisp, these make a wonderful meatless main with a salad or as a burger stand-in when served on a bun with a smear of aioli.

Why you should make this: These Farro and Mushroom Burgers are much more flavorful than anything you'll find in the freezer aisle.

Next time we might think about: The texture of these little patties is quite delicate, forming and chilling ensures that they won't lose shape when it comes time to fry.
