A Sandwich a Day: Seared Beef Tongue at Noble Pig in Austin

Cedar Park, a northwest suburb of Austin is home to Noble Pig, a small, unassuming deli-like shop that boasts delicious specialty sandwiches. It seems to be getting easier and easier to find beef tongue in and around Austin as more chefs are featuring it, and more customers grow to understand the beauty of this organ meat.
Noble Pig sears up generous portions of their tongue sandwiches between slices of freshly baked bread, lightly grilled and then slathered with aioli. Some smokey green onions and a tart red pepper relish brighten up the whole combination. One of my favorite bites is when the garlic from the aioli really comes through and pairs with the intense beefiness of the tongue.
Everything—from the bacon to the bread to the pickles to the aioli—is made from scratch (save the potato chips but the chef does add his own custom seasonings to them). I wish the bread was a bit more toasted and had slightly more crunch to contrast the very tender tongue, but otherwise this is an awesome sandwich.
Noble Pig plans to expand nextdoor to sell specialty meats, pâté and charcuterie items.
