We'd been talking at Serious Eats World Headquarters about the dearth of crispy potato-stuffed sandwiches in the world. Looks like somebody heard us. The thin-sliced Yukon Gold chips stay surprisingly crisp pressed up against the egg, cheese, and truffle oil–spiked ketchup.
