A Sandwich a Day: Grilled Pimento Cheese Sandwich at Early Girl Eatery in Asheville, NC

When it comes to grilled cheese sandwiches, everyone has their favorite. From extra sharp cheddar to havarti to tetilla, I thought I'd tried them all. At Early Girl Eatery in Asheville, North Carolina, I experienced yet another variation on this old favorite. The Grilled Pimento Cheese Sandwich ($6.50) layers pimento cheese, tomatoes, and spinach on toasted, buttered whole wheat bread.

To be honest, warm pimento doesn't have my favorite texture. When it's heated, pimento cheese has a soft, pasty, and loose consistency that doesn't hold up well in a sandwich. The crunchy toasted wheat bread makes this sandwich somewhat easier to eat and, when I got over the texture, the pimento flavor was addictive.

It has a bite from the sharp cheddar cheese as well as a lingering smokiness. Early Girl is known for their farm to table approach to ingredients and the tomatoes on the sandwich were perfectly ripe. They also added the acidity, which is so key to elevating grilled cheese sandwiches from "good" to "awesome."

At $6.50 this sandwich was a bargain. It also comes with a house side, and I forewent the grits, cornbread, and double-cut bacon to get the special of the day: an heirloom tomato salad. Exceptionally bright and flavorful, it left me feeling as cheery as the yellow interior of the restaurant.
