For last week's Weekend Cook and Tell challenge we decided to revisit on of last summer's sweetest topics, an ode to summer corn that we dubbed Kernels of Deliciousness, Part 2. We asked all of you to share your summerlong adventures with corn. We were curious what was happening to all those cobs aside from just grilling them up and slathering them with salt and butter (which we are total suckers for, by the way. Here's a look at some of your lovely end-of-summer corn creations.
Open View Gardens decided this was the year to revisit home-grown corn only to find a good portion of the crop gobbled up by hungry garden critters. Nevertheless, Open View Gardens was generous enough to share not only gardening experiences but also this recipe for a house favorite Pasta with Basil, Pancetta and Corn.
It's been way too hot to cook up in TheKitchenWitch's neck of the woods. She's been eating her Olathe sweet corn raw in a salad of cucumbers, snap peas, fresh mozzarella, and summer-luscious tomatoes, otherwise known as the Hot as Balls Salad.
zahavah has been having quite the corn filled summer with buttery, cheesy Oven Roasted Corn sprinkled with Tumbleweed, a cave-aged cheese from 5 Spoke Creamery and a Succotash of Corn, Purple Beans, and Tomatoes bathed in a lemony butter.
Our own dbcurrie might be underselling herself by saying that she's done a lot with corn lately. Taking a look at a sampling of her corn-centric recipes we'd say that a silky smooth Corn Soup, charred ears of Corn with Chili Lime Butter plus a Corn and Summer Vegetable Pasta Salad and Corn and Black Bean Salsa is some serious devotion to corn cookery.
