Here at Weekend Cook and Tell we're all for soaking in every last bit of warm weather and sunshine, which translates to less time spent in the kitchen. For last week's challenge we took a cue from one of Mark Bittman's most popular columns and asked all of you to share your favorite summer dinners made in 10 minutes or less. Here's a look at some favorites.

We're going to let the ten-minute rule slide for theindolentcook for this Smoked Salmon Salad with Grapefruit, Yogurt, Coriander, and Toasted Almonds that looks like it's totally worth an extra five minutes of prep time.

Katerina chimed in with two eggy ideas for summer dinners in a flash. Simply Poached Eggs turn into dinner when served with create an broccolini and crusty bread. And we love her take on a Vegetarian Carbonara with a fresh tomato basil sauce enriched with egg yolks.

Felila's quickest meal begins with pasta as well, this time tossed with a sauce of garlic and onion sautéed bitter greens finished with salty feta.

omnomnom is a feta fan as well, mixing up a bulgar salad with tomatoes, lemon juice, olive oil, and a handful of that salty, crumbly Greek cheese.

KarmaFreeCooking is all about flatbreads for easy to assemble dinners. Topped off with spinach and cheese with a drizzle of olive oil, this Popeye Pizza comes together quicker than you can say "I yam what I yam!"

Curries are usually a time consuming endeavor but this chile and mustard spiced Potato Gravy Curry from torviewtoronto come together in just about as long as it takes for the potatoes to soften.

When dinner needs to happen ASAP philandlauren traveled to Spain for this Pan con Tomate Sub with Manchego and Serrano Ham. With a nod to the excellent stone fruit available, philandlauren toped off the sub with slices of ripe nectarine.

Quick cooking shrimp are dbcurrie's answer to a time saving summertime meal. Her Summer Shrimp Pasta is mixed up with all sort of seasonal produce, handful of juicy pink shrimp, and finished with a brightening squeeze of lemon.
