Weekend Cook and Tell Round Up: Hello, Salmon!

Last week on our Weekend Cook and Tell challenge we celebrated the return of northern California salmon season with a challenge we called Hello, Salmon! We asked all of you so seek out sustainably raised swimmers and share your best salmon recipes. Let's take a look at some of our favorites.

Cassaendra could eat salmon everyday if she could, well, at least the crispy skin. For this week's challenge she kept it simple with a grilled fillet accompanied by a salad of spring mix, portobello mushrooms, strawberries, almonds, black pepper, cayenne, and grated habanero cheese that hit the spot for an easy spring lunch..

. According to blackjack: delicious, amazing, and mouth-watering don't even begin to convey the tastiness of this salmon preparation.

Growing up in northern California allowed melissalara01 to have wonderfully fresh caught salmon—once she even landed a 42-pounder! Her go-to salmon dish is a side slathered in garlicky mayo baked in foil for 15 minutes. melissalara01 promises that this is the moistest, most flavorful salmon you'll ever have.

theindolentcook blames too many episodes of Australian Masterchef for this fancy Lime and Pepper-Infused Salmon, a self imposed challenge to make a "pretty dish" in under and hour. Did theindolentcook succeed? If we were judging we'd say definitely!
