Weekend Cook and Tell Round Up: Eggs Abound

Last week on the ol' Weekend Cook and Tell we asked all of you to share your favorite egg-centric recipes for a challenge we called Eggs Abound. Folded into omelettes, baked, poached, streamed, and over easy, medium or hard, this week's challenge resulted in dozens of eggy ideas and recipes. Let's take a look at some of the most eggcellent responses.
vizslalvr combined zucchini and ginger for easy weeknight baked frittata. Another eggy favorite is spaghetti with fried eggs topped with rosemary breadcrumbs.
Our pal dbcurrie goes through eggs like they're going out of style. Here's a peak at some of her greatest, eggiest hits: yolky grilled cheese, veggie egg foo young, picnic-perfect deviled potatoes, and of course deviled eggs topped with pink and green peppercorns.
Chris Hansen's preferred hangover breakfast is a fridge emptying plate of chilaquiles made with leftover corn tortillas, leftover salsa verde, leftover onions and tomatoes, finished off with a runny egg.

ElizabethS likes her huevos with a Spanish flair. This vegetable tortilla is becoming a regular in the recipe rotation.
ophelea fielded a request for eggs in a hole and created these very sweet heart-shaped, spinach stuffed toasts for Easter breakfast.
mangotomato shared all sorts of eggy breakfast inspiration including an egg topped breakfast pizza, an egg and Spam sandwich, and shakshuka, an Israeli dish of eggs baked in tomato sauce.
theindolentcook shared two omelettes for this week's challenge, one filled with gorgeous little chanterelles and another stuffed with shredded carrots and onions, as well as a fluffy chocolate and matcha steamed egg cake.
