A toasted slice of housemade rosemary and currant toast is the base for Euro Pane's famed Egg Salad Sandwich. There's a slather of tomato pesto to bind the handful of fresh arugula. Then comes the star of the show: egg salad.
There's a reason this sandwich has inspired a mini cult of loyal devotees. The eggs taste more like they've been gently poached as opposed to boiled. The still-soft yolks blend with the mayo—ceamy, velvety bites are piled generously on the toast with a smattering of chives to finish it off.
