With a strong focus on eating seasonally, Clean Start is full of veggie-heavy recipes, nearly all vegan and gluten-free. But somehow Walters has kept her recipes fresh and exciting, never once venturing into scary health food territory. By creating recipes that center around vegetables instead of heavy grains or even worse, meat replacements, Walters has come up with a very appealing approach to what she refers to as clean eating—i.e. eating seasonal, wholesome, and minimally processed foods.
