"My favorite all-time party snack is, well, a dip. Does that count as a "snack"? This may cause the "that's not serious eats" crowd to come out in full force, but fuggit. I love this crazy ol' Velveeta-RoTel dip. Cube a one-pound loaf of Velveeta, dump in a can of RoTel, and nuke that all in a microwave-safe dish until melted. I'm like Homer Simpson for this stuff, tongue hanging out, eyes rolling back, making gaaaagrh noises as I zombie-step toward the bowl, tortilla chips in hand. My inner food snob recoils a bit at the whole thing, but tell you what — make it with Kenji's cheese sauce (pictured) and you don't have to feel as bad about bogarting the whole bowl. Green Pea 'Hummus'
Frozen peas. You probably haven't thought about them since age seven. I keep a bag in the freezer for this easy-peasy (ha?) dip. Puree them with olive oil, a few squeezes of lemon juice, and fresh-cracked pepper and salt. It's hummus-reminiscent in creaminess, but tastes like sweet peas straight from the pod. Very refreshing, and a nice pea fix when fresh ones aren't in season. I like to serve it with pita chips or grilled bread. —Erin Zimmer
