Weekend Cook and Tell Round Up: Resolute Menus

Last week on the Weekend Cook and Tell we asked all of you to share your New Year's Resolutions and the dishes that were helping you stick to them for a challenge we called Resolute Menus. Losing a bit of weight and saving money on groceries were two of our most popular resolutions, let's take a look creative ways all of you have been cutting calories and sticking to grocery budgets during the first two weeks of 2011.
Resolved to eat more balanced meals in 2011, theindolentcook began the year with a vegetarian spread of lentil salad, grilled naan, and a tangy Tzatziki-inspired Lemongrass Yogurt Dip.
Chris Hansen has two resolutions for the new year: saving money by cooking more meals at home and eating more fiber. He combined the two with this hearty Pork and Collard Greens Soup made with Bob's Red Mill Soup Base found on sale. The whole pot of soup was enough to eat for a week and came in at only $15.
gooski resolved to become "next generation of The Frugal Gourmet." The plan is to save money in the kitchen by cooking at home more often and using simple, honest ingredients that inspire.

Not really one for New Year's resolutions, orchidgirl is trying to cut back on the diet soda and desserts by keeping her palate occupied with good-for-you options like this Radish, Cucumber, and Dill Salad.
Even though KarmaFreeCooking is a vegetarian, her goal for 2011 is to up her salad intake by introducing new greens and dressings to her leafy repertoire.
cathyeats lined up her Top 5 Resolutions, including ones that could benefit all of us like eating more vegetables, whole grains, and fatty acids, and cutting out processed foods.
