Last week for our Weekend Cook and Tell, we asked all of you to put your Thanksgiving leftovers to good use with a challenge we called Thanksgiving Leftover Derby. The goal was to take your leftovers and do a little more than eat them straight out the the Tupperware or as a sandwich. All of those leftovers proved to be quite the muse for this week's challenge, let's take a look at some of our most inspired creations.
fritesandfries baked all of the leftovers in a Thanksgiving Pot Pie. According to fritesandfries, all of the mashed potatoes, turkey, and veggies made this pie into a complete carb bomb, but a very tasty one.
erunuevo took leftover stuffing and added a couple eggs, sharp Cheddar, and finely diced onion, bell pepper, and celery to make little fried Stuffing Patties served with a Cranberry-Tomato Salsa.
This year leftover cranberries were the most versatile leftovers for dbcurrie; she incorporated it into a sweet-tangy Cranberry Salsa for quesadillas and baked up a batch of Cranberry Yogurt Biscuits.
Gator Pam shared two great ideas for leftovers. The first is a spicy Fusilli with Turkey and Broccoli Rabe to use up that leftover bird and the second was Mashed Potato Latkes, perfect this year with Thanksgiving and Hanukkah falling so close together.
