Weekend Cook and Tell Round Up: Beyond Tofurkey, Vegetarian Thanksgiving Options

For last week's Weekend Cook and Tell challenge we wanted to make sure that none of our vegetarian friends had more to eat this Thanksgiving than a scoop of gravy-less mashed potatoes or even worse, the dreaded Tofurkey. We asked all of you to share ideas for meatless Thanksgiving mains and it looks like no one's going to be missing the turkey with these Venerable Vegetarian Thanksgiving Options. Let's take a look at some of our favorite responses.

LizzyM's vegetarian mom will be forgoing the turkey in favor of this fall-flavored Nutmeg-Spiked Sweet Potato Risotto with Rosemary.

TheRunawaySpoon shared a recipe for Butternut Squash Lasagna with Sage, a take on butternut squash ravioli complete with amaretti cookies, hearty enough to feed a crowd.

New Zealand oka yams were the inspiration for theindolentcook
's Yam Bake topped with Tangelos, Yogurt and Almonds, an exotic dish that would be totally at home on the Thanksgiving table.

We just love lemonfair 's adorable fall-festive Pine Cone Pecan appetizer, a cheesy starter to please vegetarians and carnivores alike.

Fall is cathyeats' favorite food season and she's been having a field day with all of the deep orange and green veggies the season has to offer. She stuffed Kabocha Squash with Quinoa and Chickpeas for a hearty and vibrant Thanksgiving main.

Vegetarian Thanksgiving is KarmaFreeCooking forté—past celebrations have included Butternut Squash Mac and Cheese, Pumpkin Risotto, and a lovely Sweet Potato Flan for dessert.

lolabix's meatless Thanksgiving centerpiece is a Roasted Vegetable 'Meatloaf' made with vegetarian crumbles in place of ground beef, check out the recipe here.

Squash-based risottos seems to be the winning entrée for this week's challenge. noveleats chose hubbard squash and mushrooms for a rib-sticking vegan risotto.
